Anzac Biscuits

Makes: 30
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients
1/3 cup desiccated coconut
1 cup rolled oats
1cup plain flour
½ cup brown sugar
1/3 cup unsalted peanuts
100g butter
3 tblspns golden syrup
½ tspn bicarbonate of soda
1 tblspn boiling water

 Method
1. Preheat oven to 150C. Grease and line baking trays with baking paper.
2. Combine coconut, rolled oats, flour, brown sugar, and peanuts in a bowl.
3. In a small pan, melt butter and golden syrup together over low heat.
4. In a separate small bowl add bicarb soda.
5. Pour the boiling water over it and immediately add the bubbling mixture to the golden syrup mixture.
6. Pour this into the dry ingredients and mix well.
7. Place teaspoonfuls of mixture onto lined baking trays.
8. Bake for 20 minutes in preheated oven.
