Baked Chicken Spring Rolls

Serves: 4
Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients
1 barbecued or roast chicken
2 corncobs, husks removed
4 green shallots, sliced
1 tspn finely grated ginger
½ tspn sesame oil
1 tblspn soy sauce
1 pkt frozen spring roll wrappers
¼ cup (60ml) peanut oil

Method
1.Remove meat from chicken and finely shred, and then place in a bowl.
2.In a saucepan cook corn in boiling water over medium heat for 5 minutes.
3.Drain and cool under running water. Cut kernels from cobs.
4.In a bowl add chicken, shallots, ginger, sesame oil, soy sauce and corn. Mix well.
5.Preheat oven to 200C.
6.Lay out spring roll wrapper with point facing towards you.
7.Place two tablespoons of chicken mixture on wrapper then fold wrapper over filling once. Fold in side corners. Brush far corner with water then roll up tightly.
8.Repeat with remaining filling and wrappers.
9.Place spring rolls on an oven tray. Brush with peanut oil then bake for 25 minutes.
