Baked Potatoes with Sour Cream

Serves: 2
Preparation time: 10 minutes
Cooking time: 60 minutes

Ingredients
2 large baking potatoes
1 tspn olive oil
60g butter
2 rashers rindless bacon
140ml sour cream
4 chives, chopped

Method
1.Prick the potatoes all over with a fork and brush with the olive oil.
2.Preheat oven to 200C, add potatoes, and cook for 1 hour or until tender.
3.Cook the bacon rashers then dice and set aside.
4.Once potatoes are cooked, cut a cross in the top of each baked potato. Spoon some sour cream onto the top of each potato and top with bacon bits. Garnish with the chives.
