Beef and Tofu Stir-fry

Serves: 4

Cooking time: 10 minutes

Ingredients
400g rump or topside steak, thinly sliced
6 tspns cornflour
2 tblspns soy sauce
2 tspns sesame oil
1 x 250g pkt firm tofu
2 tblspns peanut oil
4 green shallots, ends trimmed, thinly sliced diagonally
1 long fresh red chilli, seeded and finely chopped
2 tblspns beef stock
ground white pepper

Method
1.In a medium bowl add beef, cornflour, 2 teaspoons of the soy sauce and the sesame oil.
2.Cut the tofu into 5mm x 10mm strips.
3.Heat 3 teaspoons of the peanut oil in a wok over high heat. Add half the beef mixture and stir-fry for 2 minutes or until brown.
4.Transfer to a bowl and keep warm. Repeat with 3 teaspoons of the remaining peanut oil and the remaining beef mixture.
5.Heat remaining peanut oil in the wok over medium heat. Add tofu, shallots and chilli, and stir-fry for 2 minutes.
6.Add beef mixture, stock and remaining soy sauce, and stir-fry for one minute. Remove from heat. Season with pepper.
