Beef Casserole

Cooking time: 2 hours and 15 minutes
Ingredients
Oil for frying
1 brown onion, chopped
500g chuck steak or similar, diced
4 potatoes, peeled and chopped
2 carrots, peeled and chopped
400g can chopped tomatoes
1 cup beef stock
2 tblspns instant beef gravy powder
Method
1.Preheat oven to 180C.
2.Heat saucepan over medium heat, add oil.
3.Add onion, sauté for a few minutes until it has softened.
4.Add meat, cook until starting to brown.
5.In a casserole dish place potatoes and carrots, add meat and onion.
6.Stir in chopped tomatoes and stock.
7.Put in oven for 1 ½ hours (covered). Stirring every now and then.
8.Make gravy into a thick consistency by adding boiling water.
9.Add gravy mix to dish, stir, and then continue to cook for 30 minutes.
