Calzones

Ingredients
7g sachet active dry yeast
1 cup warm water
1 tblspn olive oil
1 tspn white sugar
1 tspn salt
2½ cups plain flour, divided
1 tspn olive oil
½ cup ricotta cheese
1½ cups grated cheddar cheese
½ cup diced pepperoni
½ cup sliced fresh mushrooms
1 tblspn dried basil leaves
1 egg, whisked
Method
1.To make dough: Dissolve yeast in water, in a bowl. Add the oil, sugar and salt; mix in 1 cup of the flour until smooth. Add the remaining flour and mix until smooth. Knead dough on a lightly floured surface for about 5 minutes. Place dough in a bowl with 1 teaspoon olive oil in the bottom then flip the dough andLet rise for 40 minutes or until double in size.
2.To make filling: While dough is rising, mix the ricotta cheese, cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl. Mix well; cover and refrigerate to chill.
3.Preheat oven to 190C.
4.When dough is ready, separate it into 2 equal parts, and firmly press down. On a lightly floured surface, roll out into thin circles. Fill each circle with ½ of the filling and fold over, securing edges by folding inpressing with a fork. Brush the top of each calzone with egg and place on a lightly greased baking tray.
5.Bake for 30 minutes in preheated oven; serve hot.
