Cauliflower Soup

Serves: 4
Preparation time: 10 minutes
Cooking time: 35 minutes

Ingredients
Oil for frying
1 onion, chopped
3 cups chicken stock
1 cauliflower, broken into florets
1 carrot, peeled and chopped
1 potato, peeled and chopped
Salt and pepper to taste

Method
1.Heat oil in a large pot over medium heat.
2.Add onion and cook until it has softened.
3.Add stock and all other vegetables.
4.Bring to the boil, and then reduce to a simmer for 30 minutes.
5.Process with a stick blender until mixture is smooth.
6.Season to taste with salt and pepper.
