Cheese and Bacon Potato Skins

Serves: 6
Preparation time: 10 minutes
Cooking time: 1 hour and 15 minutes

Ingredients
5 large (1kg) unwashed potatoes, scrubbed
12 rashers shortcut bacon, chopped
6 green shallots, sliced
40g butter, melted
1 cup grated cheddar cheese

Method
1.Preheat oven to 180C.
2.Place potatoes on a baking tray. Bake in oven for 1 hour. Set aside to cool.
3.Meanwhile cook bacon for 5 minutes in a frying pan over medium heat. Remove from heat. Add half the onions. Mix well.
4.Preheat grill to medium-high heat. Cut potatoes into quarters, making sure skin remains intact.
5.Scoop out inside, leaving a 5mm layer of potato.
6.On a baking tray place skins, flesh-side down. Brush with half the butter.
7.Grill for 3 minutes.
8.Turn over. Brush with remaining butter. Grill for a further 3 minutes.
9.Spoon bacon mixture over skins. Top with cheese. Grill for a further 5 minutes, or until cheese is melted.
10.Sprinkle with remaining onions.
