Cheese and Zucchini Bake

Serves: 4
Preparation time: 5 minutes
Cooking time: 45 minutes

Ingredients
1 good sized zucchini, grated
1 onion, finely chopped
1 cup self raising flour, sifted
2 tspns finely chopped garlic
1 tspn dry English mustard
5 eggs
200g cheese, grated
1/2 cup cream
good pinch salt
pepper to taste

Method
1.Preheat oven to 200C.
2.Drain as much juice out of the zucchini as possible so place in a colander and drain over sink or wrap the grated zucchini in several layers of paper towel and squeeze out as much juice as possible.
3.Put all the ingredients in a bowl and mix well.
4.Season to taste with salt and pepper.
5.Pour into a greased baking dish and bake for 40 mins until golden and set.

Notes
Use full cream or skim milk if you don’t have any cream.
