Chicken in Peanut Sauce

Ingredients
2 tablespoons oil
1 onion, cut into wedges
1 tspn crushed garlic
2 tspns curry powder
600g chicken breast fillets, cut into strips
¼ cup honey
½ cup chicken stock
¼ cup crunchy peanut butter
Method
1.Heat oil in a large frying pan on high heat. Cook onion until softened.
2.Add garlic and curry powder. Cook, stirring for 1 minute.
3.Add chicken and cook for 4-5 minutes, until browned.
4.Stir in honey, stock, and peanut butter. Bring to the boil.
5.Reduce heat to low and simmer for 10 minutes, until thickened slightly and chicken is cooked through.
