Chicken Noodle Soup

Ingredients
1 barbecued chicken
1 tblspn olive oil
4 green shallots, finely sliced
2 cups chicken consommé
2 cups salt reduced chicken stock
175g fresh Singapore Noodles, chopped
420g can sweet corn kernels, drained
2 tblspns soy sauce
Method
1.Remove the skin, pull off meat (keep as much meat as possible).
2.Finely shred meat.
3.Refrigerate until needed.
4.Heat oil in a large saucepan over medium heat. Add green shallots and cook 2 minutes.
5.Add consommé and stock. Bring to the boil.
6.Reduce heat to medium-low and add noodles. Cook for 3 minutes.
7.Add corn kernels, chicken, and soy sauce. Mix well and cook for further 2 minutes.
