Chickpea Patties

Serves: 8
Preparation time: 5 minutes
Cooking time: 10 minutes

Ingredients
420g can chickpeas, drained and rinsed
1 potato, peeled and grated
1 onion, finely chopped
1/3 cup self raising flour, sifted
½ tspn dried oregano leaves
½ tspn ground cumin
Salt and pepper to taste
¼ cup polenta
oil for frying

Method
1.Place chickpeas into a bowl. Mash well.
2.Add the potato and onion.
3.Stir in the flour, oregano, and cumin. Season to taste and mix well.
4.Shape ¼ cup of the mixture into a patty. Coat in polenta, shaking off excess.
5.Repeat with remaining mixture.
6.Heat enough oil for shallow frying in a pan over medium heat.
7.Cook patties for 2-3 minutes each side, until golden.

 

 

 

 

Notes: The patty mixture freezes well.
