Chinese Egg Noodle Stir Fry

Serves: 4
Preparation time: 10 minutes
Cooking time: 10 minutes

Ingredients
2 tblspns oil
1 medium brown onion, thinly sliced
1 clove garlic, finely chopped
1 large carrot, peeled and cut into matchstick sized strips
100g snow peas, stringed and cut lengthwise into 3 or 4 strips
100g bean sprouts
ΒΌ cup soy sauce
1 tblspn oyster sauce
1 tblspn chilli sauce
440g thin hokkien noodles
225g broccoli, cut into florets

Method
1.Heat oil in a wok over high heat. Add the onion and garlic to the wok and stir fry for 2 minutes.
2.Add carrot, snow peas and bean sprouts and stir fry for 2 minutes.
3.Remove the wok from the heat and add sauces.
4.Place the noodles and broccoli in a separate saucepan of boiling water and cook for 2 mins.
5.Drain the noodles and broccoli, and add them to the wok, Toss well to combine.
