Chorizo, Spinach and Ricotta Pasta

Cooking time: 20 minutes
Ingredients
375g pasta shells
1 tblspn olive oil
2 chorizo sausages, sliced
1/3 cup fresh sage leaves
150g ricotta cheese
100g baby spinach leaves
2 tspns dried chilli flakes
Method
1.Cook pasta as per directions on the packet. Drain pasta and set aside ½ cup cooking liquid.
2.Place cooked pasta in a bowl.
3.Heat oil in a large frying pan on high heat. Cook chorizo on each side for 1-2 minutes, until crispy.
4.Add sage and continue cooking for 1 minute.
5.Add the pasta to chorizo also adding ricotta, spinach, chilli and reserved cooking liquid.
6.Cook on a low heat until spinach wilts slightly and pasta is heated through.
