Coconut and Rice Pudding

Serves: 8
Preparation time: 20 minutes
Cooking time: 30 minutes

Ingredients
1½ litres milk
200g desiccated coconut
1 tspn vanilla essence
200g Arborio rice
200g caster sugar
80g crème fraiche

Method
1.In a large saucepan bring the milk to the boil, add the coconut and vanilla.
2.Once milk starts to boil add the rice and stir occasionally; cook for 30 minutes over medium heat until the rice is cooked and milk becomes creamy.
3.Stir in sugar and cook for 5 more minutes.
4.Add crème fraiche.
5.Divide into serving bowls. Refrigerate until ready to eat; serve cold.
