Creamy Steak Burgers

Ingredients
Hollandaise Sauce
½ cup white wine vinegar
3 green shallots, finely sliced
8 black peppercorns
1 tspn dried tarragon leaves
4 egg yolks
125g butter, melted
Coleslaw
¼ green cabbage, finely shredded
¼ red cabbage, finely shredded
1 small carrot, peeled and grated
3 green shallots, thinly sliced
2 tblspns sour cream
Juice of ½ small lemon
1 tblspn olive oil
4 scotch fillet steaks, trimmed
1 loaf Turkish bread, cut into 4, split and toasted
Method
To make Hollandaise Sauce:
- In a saucepan add vinegar, green shallots, peppercorns, and tarragon.
- Bring to boil over medium heat.
- Reduce heat to low and simmer for 2 minutes or until reduced by half. Strain. Leave to cool.
- Place 2 tablespoons vinegar mixture in a food processor. Add egg yolks. Process for 30 seconds. With the motor running, slowly add melted butter until a slightly thick sauce forms. Transfer to a bowl. Cover with plastic wrap.
To make coleslaw:
- 1.In a large bowl mix cabbages, carrot, green shallots, sour cream and 1 tablespoon lemon juice. Toss well.
To make Burgers:
- In a frying pan over medium to high heat add 2 teaspoons oil. Cook steaks, in 2 batches, for 4 minutes each side for medium or until cooked to your liking.
- Spoon coleslaw onto Turkish bread bases. Top with steaks. Pour over hollandaise sauce. Cover with bread tops.
