Fettuccine Carbonara

Serves: 6
Preparation time: 10 minutes
Cooking time: 25 minutes

Ingredients
1 tblspn olive oil
4 shallots, peeled and sliced
1 large onion, sliced
500g bacon, rind removed and cut into strips
1 clove garlic, chopped
500g packet fettuccine
3 egg yolks
½ cup cream
¾ cup grated parmesan cheese
Salt and pepper to taste

Method
1.Place olive oil in a large heavy-based saucepan and heat over a medium heat for 1 minute.
2.Add shallots fry for 2 minutes, stir in onion and bacon, and cook until bacon is lightly browned.
3.Stir in garlic cook for 2 minutes, and then remove from heat.
4.Cook pasta as per instructions on the packet. When cooked, drain and add to bacon mixture.
5.In a medium bowl, whisk egg yolks, cream and parmesan.
6.Stir cream mixture into pasta.
7.Season with salt and pepper to taste.
