Garlic Prawns and Rocket Spaghetti

Serves: 4
Preparation time: 20 minutes
Cooking time: 12 minutes


Ingredients
375g spaghetti
500g peeled green prawns, with tails on
1 tblspn olive oil
1 onion, halved, thinly sliced
2 cloves garlic, crushed
375ml can Carnation evaporated milk
½ cup chopped fresh parsley
50g rocket
Salt and pepper, to taste
Shaved parmesan, extra rocket and cracked pepper, to garnish

Method
1.Cook pasta in salted water as directed on the packet. Drain, and then cover to keep warm.
2.While pasta is cooking, remove tails from prawns
3.Heat oil in a large saucepan. Add onion and garlic. Cook, stirring occasionally, until onion has softened. Then add prawns. Cook, stirring, for 2 minutes.
4.Add evaporated milk. Bring to boil. Add pasta, parsley, and rocket. Stir to combine. Remove from heat.
5.Add salt and pepper to taste
6.Sprinkle shaved parmesan, rocket leaves and cracked pepper over the top.
