House Fried Rice

Serves: 8
Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients
315g uncooked white rice
3 tblspns sesame oil
1 small onion, chopped
1 clove garlic, chopped
155g small green prawns – peeled and deveined
60g diced ham
155g boneless chicken breast halves – cooked and chopped
2 stalks celery, chopped
2 carrots, peeled and diced
1 green capsicum, seeded and chopped
90g green peas
1 egg, beaten
60ml soy sauce

Method
1.Cook rice as per directions on the packet. In the meantime, heat a wok or large frying pan over medium to high heat. Pour in sesame oil and add onion. Fry until golden, then add garlic.
2.When garlic is starting to brown, mix in prawns, ham, and chicken. Fry until prawns are pink.
3.Lower heat to medium and stir in celery, carrot, green capsicum, and peas. Fry until vegetables are crisp – tender. Stir in egg and cook just until egg is scrambled.
4.Once rice is cooked, mix thoroughly with vegetables and stir in soy sauce.
