Ice Cream Custard

Serves: 4
Preparation time: 5 minutes
Cooking time: 15 minutes

Ingredients
3 tblspns butter
3 tblspns plain flour
2 cups milk
2 eggs
3 tblspns brown sugar
2 tspns vanilla essence

Method
1.Melt butter in a medium sized saucepan then stir in the flour.
2.Cook gently, add one and half cups of milk, stirring constantly, and bring to the boil.
3.In a small bowl, mix remaining half cup of milk with eggs, sugar and vanilla.
4.Slowly add hot mixture to the egg mixture in the bowl, stirring constantly.
5.Pour back into the pan and heat, stirring all the time, until the mixture bubbles round the edges.
6.Take off heat and cool pan in a sink of cold water. Cover with plastic wrap until ready to use.
