Indian Style Curried Lamb Shanks

Cooking time: 2 hours and 15 minutes
Ingredients
Oil for frying
6 lamb shanks
1 large onion, finely chopped
½ cup Pataks Rogan Josh Curry Paste
400g can diced tomatoes
1 cup beef stock
Method
1.Preheat oven to 160C or 140C for fan forced.
2.Heat oil in a frying pan over medium heat, brown the shanks, set aside.
3.Add onion to the pan, sauté for a few minutes until soft and golden.
4.Add curry paste and cook for 1 minute.
5.Add the tomatoes and stock, and bring to the boil.
6.In a casserole dish, add shanks and pour tomato mixture over top, cover and bake in oven for 2 hours.
