Mexican Baked Beans

Cooking time: 35 minutes
Ingredients
1 tblspn olive oil
1 large brown onion, chopped
1 tblspn Mexican chilli powder
2 medium green capsicums, seeded and chopped
2 x 420g cans red kidney beans, drained and rinsed
2 x 400g cans diced tomatoes
Method
1.Preheat oven to 180C.
2.In a frying pan heat oil over medium heat.
3.Add onion, cook for 5 minutes, stirring. Add chilli powder and capsicum.
4.Cook for one minute.
5.Add beans and tomatoes and bring to the boil.
6.Transfer to a casserole dish and bake for 30 minutes.
