Mexican Meatballs

Serves: 4

Ingredients

Tomato Salsa

2 tomatoes, seeds removed, diced
310g can corn kernels
1 avocado, diced
juice of 1 lime
½ cup coriander leaves, chopped
salt and pepper to taste

Meatballs
750g chicken mince
1 small brown onion, grated
35g packet salt-reduced taco seasoning mix
1 cup fresh white breadcrumbs
½ cup coriander leaves, finely chopped

Method
1.Preheat oven to 200C.
2.Make tomato salsa: In a bowl mix tomato, corn kernels, and avocado, 2 tablespoons lime juice and coriander.
3.Season with salt and pepper. Cover and refrigerate until ready to serve.
4.To make meatballs: In a large bowl add mince, onion, taco seasoning mix, breadcrumbs, and coriander. Mix well.
5.Roll tablespoonfuls of mixture into balls. Place on a lined baking tray. Bake for 20 minutes or until cooked through. Serve with tomato salsa.
