Mince Pies

Serves: 4
Preparation time: 10 minutes
Cooking time: 55 minutes

Ingredients
1 tblspn olive oil
1 onion, finely diced
500g minced beef
2 tblspns plain flour
2 cups beef stock 2 tblspns tomato paste
2 carrots, diced
salt and pepper to taste
2 sheets frozen puff pastry, thawed
½ cup milk
1 egg

Method
1.Heat oil in large frypan over medium heat.
2.Add onion, and fry until soft.
3.Add mince and fry until brown.
4.Stir in flour, cook for 2 minutes.
5.Add stock, tomato paste, carrots and salt and pepper, bring to the boil.
6.Reduce heat to low and simmer for 30 minutes.
7.Preheat oven to 180C.
8.Place mince mixture evenly into four ramekins.
9.Cut each sheet of puff pastry into four even squares.
10.Place puff pastry over the ramekins.
11.Brush with milk and egg wash for a golden colour.
12.Place in oven and cook for 20 minutes.
