Minestrone Soup
Serves: 4
Preparation time: 10 minutes
Cooking time: 45 minutes
Ingredients
2 tspns olive oil
1 onion, finely chopped
1 tspn minced garlic
1 stick celery, finely chopped
1 medium carrot, peeled and grated
3 cups vegetable stock
400g can chopped or diced tomatoes
410g can haricot or borlotti beans, well rinsed, and drained
½ tspn chilli powder
Salt and pepper to taste
½ cup fresh basil, roughly chopped
Method
1.Heat oil in a large pot over medium heat. Add onion, garlic, celery and carrot, sauté for 2 minutes.
2.Add vegetable stock, tomatoes, beans and chilli powder. Season with salt and pepper, bring to the boil.
3.Reduce heat and simmer for 40 minutes.
4.Just before serving add basil and stir through.
