Mozzarella Deep Fried Chicken Breast

Serves: 2
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients
1 cup plain flour
1 cup dried breadcrumbs
2 boneless, skinless chicken breasts
2 eggs, beaten
Oil for deep-frying
3 tblspns olive oil
1 medium onion, diced
1 clove garlic, sliced
1 x 410g can tomato puree
20ml red wine
1 vegetable stock cube, crumbled
salt and pepper to taste
20g cheddar cheese 

Method
1.In a bowl mix together the flour and breadcrumbs. Coat the chicken breasts in the eggs then dip in the flour/breadcrumb mixture.
2.Fry chicken in a deep fryer at 170C for 15 minutes.
3.Whilst the chicken is frying make the sauce. Heat olive oil in a medium frypan. Add onion and garlic and cook over medium heat until slightly browned.
4.Add the tomato puree and reduce temperature to low. Stir until sauce starts to boil.
5.Add red wine and crumbled vegetable stock cube. Stir until sauce starts to boil. Add salt and pepper to taste. Remove from heat.
6.Place the chicken breast on a plate and pour sauce evenly over each chicken breast. Top with grated cheese.
