Nasi Goreng

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients
1 tblspn vegetable oil
2 eggs, lightly beaten
2 chicken thigh fillets, trimmed, cut into 2 cm pieces
1 brown onion, halved, thinly sliced
2 cloves garlic, crushed
2 rashers rindless shortcut bacon, chopped
2 small carrots, finely chopped
4 cups cooked white long grain rice
300g peeled cooked prawns
1 small red capsicum, seeded and finely chopped
½ cup frozen peas
2 tblspns kecap manis

Method
1.Heat 2 teaspoons oil in a wok over medium heat.
2.Add eggs. Cook for 1 minute. Cut into thin strips on a cutting board.
3.Add remaining oil and increase heat to high. Add chicken. Stir-fry for 3 minutes or until just cooked through. Place on a plate.
4.Stir-fry onion, garlic, bacon, and carrot in wok for 3 minutes.
5.Add rice, prawns, capsicum, peas and kecap manis. Stir-fry for 1 minute. Add chicken and egg. Stir-fry for 3 minutes.
