Pavlova

Ingredients
4 egg whites
1 tspn vanilla essence
1 tspn white vinegar
1 cup caster sugar
1 cup cream, whipped
Fruit to decorate
Method
1.Line a baking tray with baking paper.
2.Draw a circle on the baking paper — 22cm (9”) in diameter.
3.Beat egg whites, vanilla, and vinegar (in a glass bowl) until soft peaks form.
4.Very gradually beat in the sugar.
5.When sugar is fully dissolved into egg mixture pile it onto the baking tray, keeping the mixture within the circle.
6.Smooth the top but leave a slight hollow in the centre to allow room to place the filling.
7.Bake at 120 degrees for approximately 1 ¼ hours.
Notes
Great fruits to decorate Pavlova are strawberries, kiwifruit, sliced banana or canned passionfruit pulp.
