Pea and Sausage Risotto

Serves: 4
Preparation time: 25 minutes
Cooking time: 45 minutes

Ingredients
1 tblspn olive oil
4 sausages
1 brown onion, finely chopped
2 cups Arborio rice
½ cup white wine
½ cup tomato sauce
4½ cups vegetable stock
1½ cups frozen peas
1/3 cup flat leaf parsley, roughly chopped
salt and pepper to taste

Method
1.Preheat oven to 180C.
2.Heat oil in a large saucepan, over medium heat.
3.Add sausages, cook for approximately 7 minutes, turning occasionally.
4.Place on a plate and cover to keep warm.
5.Add onion to saucepan. Cook, stirring for 2 minutes or until onion is soft.
6.Stir in rice with onion.
7.In a jug stir wine, tomato sauce and stock. Add to pan. Bring to boil. Transfer to an ovenproof dish.
8.Bake, covered for 25 minutes.
9.Remove from oven, stir in peas. Cover and bake for 5 minutes. Remove from oven.
10.Stir in parsley and salt and pepper. Slice sausages. Stir through risotto.
