Spareribs and Peanut Congee

Serves: 4
Preparation time: 2 hours and 20 minutes
Cooking time: 60 minutes

Ingredients
250g long grain rice
250g spareribs
150g raw skinless peanuts
1.5 litres water
6 tspns salt
1 ½ chicken stock cubes
3 tblspns vegetable oil
2 tblspns chopped coriander leaves
1 tspn sesame oil

Method
1.In a bowl soak rice in cold water for approximately 2 hours.
2.Chop spareribs into 2-3 cm cubes, blanch in boiling water for 5 minutes, drain, and set aside.
3.Soak peanuts in hot water for 20 minutes.
4.In a large pot add 1.5 litres of water and bring to the boil then add the rice, ribs, and peanuts.
5.After boiling for 2 minutes turn the heat down to low. Simmer for approximately 1 hour; stir as needed to prevent rice sticking to the bottom until the mixture is the consistency of porridge.
6.Turn off heat, stir in salt, chicken stock and vegetable oil.
7.Serve topped with the chopped coriander and sesame oil.
