Spiced Parmesan Palmiers

Ingredients
2 tspns lemon pepper seasoning
2 tblspns finely grated parmesan
1 tspn ground paprika
pinch salt
1 sheet (25 x 25cm) ready rolled frozen puff pastry, just thawed
1 tblspn olive oil
Method
1.Preheat oven to 200C. Line a baking tray with non-stick baking paper.
2.Use a mortar and pestle to grind the lemon pepper seasoning until finely crushed. Place in a small bowl. Stir in the parmesan, paprika and salt, mix well.
3.Brush the pastry with oil. Sprinkle half the lemon pepper mixture evenly over pastry. Fold 2 opposite sides of pastry into the centre of the sheet. Sprinkle half of the remaining lemon-pepper mixture over.
4.Continue folding in the sides and sprinkling with lemon pepper mixture until a double log forms. Cut crossways into 1cm thick slices.
5.Place pastry slices, cut-side up, on tray, allow room for spreading.
6.Bake for 10 minutes in preheated oven. Turn palmiers over and bake for a further 5 minutes.
