Strawberry Liqueur Jelly

Serves: 4
Preparation time: 10 minutes + time for setting
Cooking time: 60 minutes

Ingredients
1kg strawberries, hulled, chopped
½ cup lemon juice
1½ cups caster sugar
1/3 cup gelatine powder
1/3 cup orange liqueur
10 x 285ml Lily Sturdy Sparkling Tumblers double cream, to serve

Method
1.In a large heatproof bowl, add strawberries. Place over a saucepan of simmering water. Cook, stirring occasionally, for 30 minutes. Remove from heat.
2.Line a sieve with muslin and place over a large bowl. Pour strawberry mixture into sieve. Set aside4 hours, or until all liquid has drained through (do not stir as this will produce cloudy jelly.) Discard remaining pulp from sieve.
3.In a saucepan add strawberries, lemon juice, caster sugar and 4 cups cold water, cook over low for 15 minutes, stirring. Increase heat to high. Bring to the boil. Remove from heat.
4.In a microwave safe bowl combine gelatine and 1 cup cold water. Microwave, uncovered, on HIGH 1 minute. Stir with a fork until mixture is clear. Add hot gelatine mixture to hot strawberry mixture. Add orange liqueur. Combine well.
5.Fill cups ¾ full with mixture. Cover with plastic wrap. Refrigerate overnight or until set.
6.Top with dollop of cream and serve.
