Sweet and Sour Pork with Noodles

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients
350g pkt fresh Singapore noodles
2 tblspns cornflour
500g diced pork
2 tblspns, peanut oil
1 red onion, halved, thinly sliced
1 medium red capsicum, thinly sliced
1 medium green capsicum, thinly sliced
2/3 cup sweet and sour sauce
440g can pineapple pieces in juice, drained

Method
1.In a large, heatproof bowl add noodles. Cover with boiling water. Stand for 2 minutes.
2.Separate noodles using a fork. Drain.
3.In a bowl, add cornflour and pork. Stir to coat.
4.Heat a wok over high heat. Add half the oil. Swirl to coat. Add half the pork. Stir-fry for 4 minutes. Place in a bowl.
5.Repeat with remaining oil and pork. Reduce heat to medium high.
6.Stir-fry onion for 2 minutes.
7.Return pork to wok. Add capsicum. Stir-fry for 2 minutes.
8.Add sauce, pineapple, and noodles.
9.Stir-fry for 2 minutes.

Notes
Budget tip serve with jasmine rice instead of noodles and save even more money!
