Tomato and Bean Soup
Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes
Ingredients
1 tblspn olive oil
1 onion, finely chopped
1 clove garlic, crushed
4 cups vegetable stock
400g can diced tomatoes
425g can Mexi beans
Salt and pepper to taste
Parsley to serve
Method
1.Heat oil in a large saucepan over high heat.
2.Add onion and garlic and cook for 1-2 minutes until onion is tender.
3.Stir in vegetable stock and diced tomatoes. Simmer for 5 minutes. Stir in Mexi beans and season to taste with salt and pepper. Simmer for a further five minutes.
4.Serve soup sprinkled with parsley.
