Tuna Mornay

Serves: 4
Preparation time: 5 minutes
Cooking time: 20 minutes

Ingredients
2 tblspns butter
1 small onion, diced
2 tblspns plain flour
300ml milk
150g cheddar or tasty cheese, grated
425g can of tuna, drained and flaked
1 cup corn kernels (frozen or 125g can) drained
1 tblspn chopped parsley
1 tblspn lemon juice
pinch paprika
salt and pepper to taste
extra 50g cheese, grated and dried breadcrumbs for topping

Method
1.Melt butter in a pan over medium heat and fry the onion until tender.
2.Stir in the flour and return to low heat for a few minutes.
3.Gradually stir in the milk, then return to the heat and stir until it becomes a white sauce.
4.Add the cheese and stir until it’s melted.
5.Add tuna and corn, parsley, lemon juice and paprika. Stir until well combined and heated through. Season to taste.
6.Put it in a casserole dish with cheese and breadcrumbs on top and bake at 200C for 5 minutes or until golden and crunchy.
